Chef Elara Voss has spent a lifetime listening to the land. Every plate at Noir & Salt begins not in the kitchen, but in the soil — in our twenty-four garden plots, in the forests beyond our doors, and in the relationships we have built with local foragers, fishermen, and farmers over eight extraordinary seasons.
We do not write a menu and then source ingredients. We walk the gardens each morning, we forage at dawn, and we let what the earth offers shape the evening ahead. This is not a philosophy — it is a practice, repeated every single day.
Nothing is wasted. Everything is intentional. The result is a dining experience that cannot exist anywhere else, because it exists only here, only now, only tonight.
